Well I can guarantee that most of you have said 'Yes, please!'. Well how about a fish dish that is full of flavour, is filling and is available for under 500 calories.
I have the answer!
Let me introduce you to Thai marinated basa with plenty of veg, perfect with home made sweet potato fries, boiled potatoes or even mash, take your pick!
What you need to do:
- Get a fillet of Basa
- Red Thai curry paste
- Water
- Any veg you fancy
- Sweet potato/ potato
After you've got your ingredients follow these steps;
-In the morning - get a sandwich bag and place your Basa fillet in, along with 1tbsp of red Thai pasta and 3tbsps of water. Close the bag and shake to make sure the fish is coated. Place this into the fridge, ready for dinner.
- At dinner - turn your oven on to preheat. (I use 200*c).
- once your oven is heated, take your fish out, place on some tin foil and scrunch around the edges of the fish, covering and narrower bits, so they don't cook too quickly.
- place your fish into the middle of the oven. (I cook for about 15-25 mins, depending on size)
- about 10mins before your fish is ready, get a microwave bowl, place a little water (no more than 100mls) into it. Now prep your veg ( I have used broccoli heads, baby sweet corn, runner beans and courgette) and place into the bowl. Cover with cling film and pierce holes into the top.
- I cook my veg for 4 mins 20 secs in the microwave at 850 watts so I can time it perfectly, however the timings for the veg will differ with every veg you use, so be careful not to
undercook or overlook your veg!
What a fab, light dinner. Give yourself a change and I promise you it's delicious!
